金钱蛋,也叫铜钱蛋,一个快手下饭菜,简单方便,味道也超赞
需要食材:
鸡蛋:4个
红辣椒:2个
蒜苔:2根
大蒜:3颗
香葱:4根
做法步骤
1.鸡蛋煮熟,大概8分钟左右,捞起浸泡在凉水里

2.用一个杯子,放入煮好的蛋,加入清水,用手掌盖住杯口开始摇晃,让鸡蛋撞击杯壁,差不多看到蛋壳基本都碎了,破了,鸡蛋很方便的就可以了从壳里滑溜出来,完整又快捷

3.将菜刀在火上加热下切,比较不沾,建议稍微切厚点,型好点不会散

4.准备好材料:辣椒,蒜苔,大蒜,香葱

5.切好配料备用

6.热锅冷油,下鸡蛋片慢慢煎至焦黄

7.焦黄后翻至另外一面,会起泡泡,正常的哦

8.两面煎好后,盛出备用,留底油

9.底油爆香蒜末

11.下蚝油提鲜,就不用放鸡精了

12.适量生抽上色好看,味道也好

13.少许盐,生抽和蚝油都有盐分哦,翻拌均匀

14.下煎好的鸡蛋片,翻炒均匀,将配料和鸡蛋混合均匀,我一般颠锅,这样鸡蛋不容易散

小贴士1.第二步有快速剥蛋小技巧2.一颗蛋一般切4-5片,太薄容易散哦3.炒制过程,尽量少翻拌,以免蛋白蛋黄分离,或蛋黄碎掉
