捞出的肘子用棉线来个五花大绑,定型

绑好的肘子放入高压锅,加枸杞,冰糖

小贴士肘子冷水入锅,煮一下,能去除腥气。绑一下肘子,能防止在压制过程中变形。放入高压锅压制时,水不要添加的太多,因为高压锅不跑水,水加太多没有滋味,后期收汁也不好收。
